How does one cook sausage in a pan? I end up slicing them open

How does one cook sausage in a pan?

I end up slicing them open to make the meat cook inside but I have to believe that there's a better way.

I just fry them for a little longer on a lower heat than for most other meats. Med heat for ~9 minutes works out pretty well. Takes a bit of time to get them to colour but they do eventually and they don't ever over cook.

I don't cook sausages in the pan, they don't brown properly since they roll around. Cutting them is sacrilege because the liquid and fat runs out too quickly.

If they're already cooked, just broil them. They still roll around on a baking sheet, but the heat is more even over the top instead of just where the meat contacts with the pan.

If they're raw sausages, I usually put them on a bed of potatoes or other root veg and bake them at 450F, flipping after 10-15 minutes. They get nicely browned from the even heat.

Personally, I pierce the sausages and put them in a dry pan so the fat can render out and fry the sausages. This is over a medium heat with a lid on. Every now again, I'll turn them to get them browned on each side.

The trick is to leave the fucking pan still. Don't fuck with it. Let them try on one side, then turn them.

I've tried a couple of different types of beer and each time I came to the conclusion that I would have been happier boiling them in water (and then finishing in the pan or the oven) and drinking the beer.

Frying in the skillet never seems to work well for me, the insides never seems to cook through by the time the outside is well browned, but baking works amazingly better.

maybe if you live on a boat. fork them and they will cook in their own fat once they heat up. most people overcook sausages because they think they need to be brown all over. ruins them.

I swear to whatever gods you favor, I'm not posting this as meme-shit, bait or trolling: sous-vide them, then brown on a hot pan or grill.

Vacuum-packing the sausages before boiling allows them to retain all of their juices, usually without rupturing. The slow-cook leaves them tender, then a hot sear on the outside crisps up the casing and leaves it with a nice color.

I've found this method especially useful for cheap sausages with those chewy, nasty gelatin based casings that turn into a stringy mess - they are practically non-existent after a solid boil in the sausage' own juices.

Also, why cook something full of fat and oil in butter, Paula Deen?

Just fry them until they cook, turning as necessary. If it burns on the outside before the inside cooks, it means you have the heat too high. (And that's true in general for just about anything, not just sausages.)
