Hello /ck/, I'm trying to figure out how to cook cheap rice/pasta dishes that contain some decent nutrients beyond carbs. What are good veggies which are cheap, rich in vitamins/minerals? Same thing with herbs/spices.
I was thinking of trying rice+masala garam+green onions+bits of ham. Other rice dishes welcome.

I don't know too much about how many nutrients vegetables have compared to each other, but can't go wrong with a core of broccoli/cabbage/carrot in stir-fries, fried rice, or ramen.
Cabbage is especially cheap, and you can get either regular round cabbage, or napa cabbage is good too. Other good vegetables I can think of are eggplant, green onion, bok choi, peppers (red usually), and onion.
