I tried making one, it took 20 minutes per pancake and the mix was too thick for the syrup to penetrate the whole pancake.
It looked better than it tasted, and I couldn't even finish it.

All the recipes I find (guides? Whatever you'd call them) just say to make regular pancake mix and throw it in a rice cooker. But 2 question:
1) My rice cooker has 3 settings, White Rice, Brown Rice, and Warm. Should I just throw everything in and hit White Rice?
2) All the guides say just use regular pancake mix, but then anyone talking about those giant fluffy Japanese pancakes mention them being sweeter and lighter than your typical pancakes, so how the fuck do they make them?

It's pretty severe with the Japanese. Their native food culture is pretty fucking tasty, but post-WW2 western food that they imported isn't quite there. The Japs are extremely autistic about appearances. It has to LOOK perfect, and to get that perfect appearance and texture they'll sacrifice taste. Use the white rice setting. Add more sugar and add baking powder to lighten up the mix. You may need to add more liquid as the pancake mix may end up too dry. Add the liquid very gradually so as not to make the mix too thin.
