its a very top secret recipe. super hard to make. you have to cut the red onions and put them in vinegar.

Sure!

2 cups red wine vinegar
1/2 cup of sugar
1 garlic clove sliced thin
1 bay leaf
1 large onion (diced or sliced thin, depending on how you want it)

Simmer everything but the onion, stirring to dissolve the sugar
after the sugars all gone, let it cool to around room temp
pour over onions, let sit for at at least a couple of hours

I usually do a couple of cloves and a couple extra bay leaves

Started by making some basic meat sauce. Sweated onions and carrots, realised halfway through that I was out of celery but went on anyway. 50/50 veal and pork mince browning, salt, pepper, oregano, thyme, bay leaf, red wine and my new favourite mushroom ketchup.

(Also if any kind anon knows how to convince my pics to be the right way up, I would greatly appreciate it)

Meanwhile, cut 3-4 aubergines in half, seasoned them and drizzled with some olive oil and put in the oven.

Once the wine had mostly reduced I added some canned tomatoes and let the meat sauce do its thing for a few hours. The aubergines Are ready when they look like pic related when you squash them with a fork

Making chicken liver with onions, the ultimate poor mans meal.

0,5kg chicken liver
2 onions
Sunflower oil
2 teaspoons butter
Salt, pepper, paprika powder
A little bit of dijon mustard

Onions are cut up,
Livers are cleaned of veins and connecting tissue
There is strawberry kompot boiling nearby

my poor broken phone wont let me post anymore, anyways:
I browned the liver on a heated pan with oil and fresh pepper;
once it browned i used 2 tsp soy sauce instead of salt.
Then I threw in the onions, butter, 2 tsp dijon mustard and a tsp of paprika powder.
Covered it up and let it cook for about 15 minutes, stirring occasionaly.
It's important that the liver stays soft, so check its texture when you mix.
