Garlic and onion powders aren't interchangeable with their fresh counterparts. That'd be like using soonth interchangeably with ginger or paprika interchangeably with red bell pepper.

I've never used garlic powder, but I started using freshly-made onion powder recently and I like it a lot. Great for marinades and other sauces.

Depends on what cuisine you cook. I know American southern cuisine uses both a bunch, so if you're a serious soul food cook, they'd be indispensable but otherwise, don't bother buying or making either.
