His pointless cayenne shaking pisses me off, his jokes and voice annoy the fuck out of me, however he's a good chef and knows what he's doing, I've made some of his recipes like the mushroom risotto and they always come out delicious as fuck.

Search for a recipe you've mastered. If you haven't mastered a recipe or he doesn't have the one you've mastered, then leave and come back when you have something in common. Learn everything you can about this recipe and really try to get it down.

Now come back and watch the video. You are going to be frustrated at how wrong he gets it.

Yeah a food times. Some of his recipes are genuinely bad. But the rate at which they're good is like 85%, and the rate at which they're outstanding is about 20%, which is really high

My dad is jealous of Chef John, lel. He saw my desktop while I was writing an obituary for Chef Johns mother Pauline who died recently (pic related) and I told him all about Chef John and how great his food is. Now whenever my dad cooks he makes some buttmad comment about the Chef. For example 'Food Wishes? Yeah, wishes it would be cooked by me and not that youtube fatass'. Or he hums the 'doodooodoodo' from the start of his videos whenever he plates food for me.
Its pretty pathetic really. Chef John is a professional, I don't expect my father to match it.

I like him because he is the most down to earth chef out there. Shows food only, no fancy editing, unnecessary shots of the chef himself or him prepping food, the entertainment factor is literally limited to his commentary alone. He explains everything without bullshit or fluff and every single one of his recipies can be made by someone who is preparing his first dish.

My only gripe is that style of cooking is very american, doesn't mean it tastes bad, I just never browse his blog when I actually want to try out something new.

I totally agree. I love his videos and the fact that they are purpose driven. He teaches. The videos aren't about him. You're right that his style is very American. I generally use his videos for technique guides and American cuisine. I'm currently studying cooking in Kyoto, so I mostly make Japanese food, but I like to find specific resources for the cuisine in question. If you are okay with it being American style, he is a wealth of knowledge.

Yeah, but don't get too excited. I'm not in a culinary program. I came to Japan originally to focus on improving my language skills before returning to the US for my PhD. So, I decided to move and I began teaching English to pay part of my way. Once here, I came into contact with a kaiseki chef and began privately tutoring him. In exchange, he teaches me Japanese cooking. I began with simple techniques and the basics of flavor profiles, then began to master particular dishes. He also owns a bar, so be has been focusing on teaching me this style of cooking so that I can begin working in the kitchen. I don't do anything with kaiseki since its too difficult, but I have learned everyday Japanese cooking as well as the most popular dishes out at Japanese restaurants. There are some local dishes thrown in too, but not as many. In short, I'm an amateur. I just got lucky with a good opportunity while I work on my studies. I'm sorry if it sounded misleading, but I feel like I am studying cooking as well since I spend about 20 hours/week on it.

I really like chef john,unlike other cooking vids, he's quick to the point

Pros:
-solid library of videos
-recipes that are easy to follow, and stuff that is practical
-more advanced than microwave-food tier, but not pretentious time consuming shit unless it offers flavor
-somewhat cleaver puns/jokes
-good camera work
-updates regularly

Cons:

-that stupid inflection of his voice
-some of his 'recipes' are a bit stretching, aka dumb
