I want to make hamburgers but I need inspiration. I mostly do the usual ground beef/breadcrumbs/egg/spices patty, lettuce, tomato, jalapeño, onion, cheese, pickles and thousand islands sauce or tszaziki (sauces home made of course) but I want something new. Post your best, /ck/, I'm hungry

I really hate to admit this but I just got home from Denny's. I got the bacon avocado burger. It was absolutely delicious. I will be going back there soon.

As a Dutchman I can very much agree with Gouda. And nice work on the buns, would you care to tell me how you do it? Our local supermarket is always out of them and when I got them at the baker's yesterday I was charged fucking €3,50 for a bag of 10, which is preposterous.

Try omitting breadcrumbs and egg. They're meant as binders though are entirely unnecessary. If you like it, keep at it, but try it at least once without and see for yourself which you prefer. Add things that add flavour. Those two ingredients do not.

Anyway, I cheat when I make burgers. I mix the mince and beef stock powder rather than salt. Adds the saltiness of salt but also additional beefiness.

As for composing the sandwich itself, if the mince was fresh ground, I cook it medium, otherwise it gets the well-done treatment. Brioche bun (or plain sandwich bread) with mustard and mayonnaise on the bottom piece, burger patty on top of that, sautéed mushrooms and/or onions on top of that, any kind of melty cheese (gouda, cheddar, gruyère, scamorza etc, smoked or plain), baby spinach leaves, top bun (or sandwich bread slice).

Because I'm a muh-heritage Hungarian (but grew up in der Schweiz), garlic and paprika burgers are also nice.

I mix paprikás/gulyás stock powder into the mince instead of beef powder as well as fresh-pasted garlic.
Spread a slice of onion-caraway bread with mayonnaise and central-Euro-style mustard, top with the burger patty, top that with sautéed mushroom and top that with either sliced trappista or pannonia (or emmentaler if I can't get trappista/pannonia easily) and, finally, a semi-pesto made of quark (or túró/juhtúró) whipped with fresh parsley and/or dill and more garlic paste on the top slice of bread. This one is messy to eat, but totally worth it.

I failed to find something I thought was really better than my usual recipe. I did omit the egg and the breadcrumbs, but the burgers were not as sturdy as I'm used to. I used pickles, onion, Gouda, lettuce, jalapeño, ground meat, thousand islands sauce and tomato. Bun lightly toasted. I have enough stuff for two more, any ideas?

Well I made the buns in large quantity but for 4 buns I guess we are at 250g flour 10g salt 1 spoon yeast 1 cofee spoon sugar
Then add 30cl water / 30cl milk 1 egg and mix (with hand but you can use a robot I guess) for 5 min
When it take a good shape add 15g soft butter, 5g by 5g critical step here
more mixing 5 min
Form a ball of dough and let it sleep for 2H ( maybe 1H depend of the yeast) the ball need to double in volume
After that just make the number of buns needed and let them sleep in a clean towel for 1H
then it's ready to be cooked, 15/20 min in the oven
I put some mix of milk and liquid butter on the top of the buns to give them this golden color

Thanks a lot, I will try it in the nearby future. Having large enough buns is a lot better. I made this abomination out of regular supermarket buns and let's just say I'm glad no one watched me eating it.

Here's my signature burger, the Hot Mess Burger.
1/4lb patty (I usually use worcestershire, salt, pepper, garlic and onion powder to season)
Grilled slab bacon
Swiss cheese
Grilled pineapple slice
Grilled sliced ham steak
Sauteed onions and jalapenos mixed with more cheese
Pickles (claussen kosher dill)
Whiskey-bbq sauce (I usually cheat and mix jameson and wee willy's bbq sauce and simmer it a bit)
Grilled/toasted bun
Optionally lettuce and tomato.
Eat while drunk, it's gonna get everywhere anyway.

Nice, thanks. On the topic of pickles, I'm lucky enough to get a jar of home made ones every time I finish one. A good pickle is important for a burger, I think. I now have my own small greenhouse in which I grow pickles, so I can make even more pickles. Well, the plants aren't that big yet, I estimate I will be able to harvest somewhere in july. Just two months of pickling after that and I'll have an ample amount.

Do you think mayo is an adequate condiment in itself or would you use a different one next time? Personally, I think the condiments are very important component. A very regular burger can really shine when e.g. a nice 1000 islands, tszaziki or blue cheese sauce is added. Ranch is also nice.

got the burgers home, but everyone fucking fell on those bags like vultures and there was no chance in hell of me getting a pic.
Anyway, they were from the Squeeze Inn, in Sacramento, so you can look up what they looked like if you wish. We had (without specifying who ate what) a Double Squeeze with Cheese with grilled onions and everything on it, a regular Squeeze with Cheese with everything, a Squeezeburger (no cheese) with everything on it, large fries to share, and a Steak Taco (their tacos fucking rock for a burger place).
