So just as the title reads I want a lil discussion about Michelin stars/guide. What are your thoughts, experiences or general comment on it. Has anyone tried a michelin starred restaurant? Is it worth it? Or is anyone a michelin starred chef?

>just curious

Don't be a slave to conformity and the establishment. Don't allow someone else to set the parameters of your creativity. Besides, fuck Michelin anyway. Fucking traitors offering aid and comfort to the enemy.

michelin star chef here, ask away, no i wont state directly who i am but i am open to guesses

eaten at alain ducasse at the dorchester, l'atelier du robuchon, the fat duck, the kitchin (where i also worked), st john and i'm sure there were some other starred places but idk.

michelin restaurants can vary quite a lot in price so whether it's 'worth it' rather depends. however going to a three starred place is always going to be exceptional even if just purely basing on service, you feel like a fucking king.

This is true. I've had better food from chipotle than from a michelin starred restaurant. The food may be presented in a novel way, the service might be good, but the food itself is sometimes just fucking weird and isn't what you want in a meal (fish cappuccino, for example).

so chipotle need a star!

It's a fun experience, somewhat like going to an art gallery or the theater. The food is pretty good, sometimes exceptional, sometimes wtf. Amazing atmosphere and service everytime. Not for everyone, but I think everyone who is a big fan of food should try it once in their lives.

I've eaten at Michelin starred restaurants. I'm not rich enough to do it often, but once a year or so I do, and I've been around for enough years for that to rack up. My impressions:

Service - This is a big difference at a high end place. The service is not dedicated to putting on airs or seeming upscale. The service is dedicated to making sure your experience there is as good as it can be. When servers are not taking your order, bringing you food or clearing your plates they're watching the room. They don't just swing by the table and ask if everything is OK. They anticipate whether or not you need them. If you look up in their direction they start advancing toward you. If you look away they stop. Water glasses are filled without interrupting the conversation at the table. If you seem the least bit unsure about the wine program the somm appears to guide you through it in light of your personal tastes and what you're ordering. Again, there's no judgement because everything on the list is something the somm chose - something s/he is excited about - the point is to find the right fit for you. And at the end of the meal dessert is not just an add-on, because there's a dedicated pastry chef so proud of what they do they may even send you home with a freebie.

Decor - You're dropping a lot of money in this place, so it isn't just clean, and there aren't just fresh flowers tastefully arranged around. Architects and interior designers were hired to work out the details of the space. The only downside of the environment is likely to be the noise level if the place is packed.

Food - Of course the food will be good. The only Michelin starred place I've eaten at where the food was just OK was Craft, right before they lost their star. Whether or not the food is a revelation depends on your experience and the chef. But the food will be good - better than anything you could make at home even if you're a good cook.

A tire company has no business judging food, that's my opinion on it. The stars mean nothing to me.

The story behind it is hilarious. Worth reading - so fucking French.

you know that most of the "inspectors" are retired chefs? and need qualifications for the job? (not like pseudo foodbloggers and other zaggast, yelpers etc)

Sorry but I can't eat comfily whilst a bunch of perfectly groomed automatons gaze at me hawkishly in order to refill a glass that I'm perfectly capable of filling myself. It's borderline creepy.

I personally do not need that level of service, either. I think it's kind of amazing to see in action, and appreciate servers who are career professionals. But I don't need it. I don't need the fancy plating that is the standard in restaurants like that, either. It's cool, but it really doesn't impress me all that much. And I don't really have the kind of money to casually eat in places where those standards are a given. So I'm generally looking for the place where the food is amazing, but the service and decor are operating to much lower standards. That allows me to dine out for 1/2 to 1/3 the cost of a place with a star.

But it is nice to know what's involved in the dining out experience at the very high end, and when I can afford it I'll do it every now and then.
