Thinking of cooking salmon with a mint and lime ice cream, parsley jelly and some green veg but I'm missing a starch and can't decide what it should be. Any suggestions?

Assuming that the ice cream isn't going to contain sugar, but I'd worry about it cooling down the salmon.
Mint and lime beurre blanc might be better, or a mint and lime hollandaise.
