Hey guys, I live in a shithole country and in the city I currently am there aren't any food trucks, at all. I am thinking of starting a business in that direction. I can equip 4 vans to begin with. What kind of food do you think I should be selling?

Anything that's relatively fast to make and easy for customers to eat while walking around. So sandwiches,burritos,soup cups,etc etc. I'd also try and make it something that only you sell. That way people will be more inclined to go to you.

Bratwürst. Grab some good German mustard, like Bautz'ner Zenf, or one of the Austrian ones. My brother drives to Austria to shop, and he's only one country over from you.
If you were over here in the UK I'd suggest eggs and bacon. That may still be a viable option but you don't have the 9am truckers and builders getting their breakfasts.
But you can get good coffee. Perhaps consider grinding it yourself, you'll get the smell that makes people want fresh-ground coffee.
Burgers. There's always room for a burger van. Your idea in OP isn't terrible, grilled halloumi is nice.
Waffles/crêpes? (CAPTCHA just gave me pancakes, lol) Cheap to produce. Sell well.
Consider storage, and power generation.
It's not a bad idea. There may be a business in that. Just check for any reason why there's no other food trucks, like any local municipality prohibition on them, or something like that, because it's a little strange that there aren't any.

Yeah check out some of the food trucks in Portland. There's nong's which is just chicken and rice in wax paper with some ginger soy sauce. Really good, sells out by lunchtime. Now she has 2 carts and a physical store.
