If I were to eat an extinct species from the Triassic, Jurassic or Cretaceous it would probably be a small or mid-sized herbivore. Maybe Alxasaurus.

Herbivore, for sure. I'd think that most carnivores would be either rife with parasites from scavenging from rotting corpses or extremely tough. Slow cooker or smoked would probably be my preferred methods of cooking, as well.
Maybe something like smoked stegosaurus ribs with a dry rub made from time appropriate herbs and spices or crock pot parasaurolophus breast meat with carrots and potatoes.

Me i would want something gnarly that would give good trophy bones. Im assuming a herbivore species because i heard most of the meat eaters gorged on carrion which is hit or miss. Could be like crab or turkey buzzard.
