OP here. I think it's hilarious that everyone is so focused on my friend's beer and ketchup. That's just weird. I was drinking the Sierra Nevada, and I don't eat ketchup (like I said before, unless it's curry ketchup). I mainly was just trying to show the fish and chips. I guess I should have taken a pic of the entire table, because then everyone could also have seen the malt vinegar, the tartar sauce (which, btw, they make the best ever), and the fried mushrooms we ate as well, so everyone could complain about that as well.

Usually they get it in powdered form and just make it up by adding water. You're looking at a very, very mild turmeric-type sauce with stewed apple (yes, THAT is what the lumps are, now you know!), sort of a yellow colour. Chip shop curry sauce is barely curried at all.
It's a rare few chip shops which make their own curry sauce from scratch - and when they do, they're generally the Chinese-owned chip shops, which make essentially a Chinese curry sauce - which is in my experience quite different, darker, and well worth a try.
OP, that's a perfectly serviceable fish and chips; as a Britbong, I approve and they look like they've done a good job there. I haven't seen halibut served here, it's normally cod or haddock here (I've seen whiting served too), but sure, why not: if it's a white fish, not too oily or bony, without too much flavour of its own, and the texture separates easily into flakes or layers, it works.

OP here, yeah, halibut is pretty common, because it's caught locally, but they also use cod, and sometimes other firm white fish from the Pacific. Just depends on what's fresh here at the time. All of NorCal is heavily fishing industry - based, so if you go out for fish and chips or other fish and seafood, you're going to get good stuff.

It's pretty rough, but:
Fry a chopped onion to soften it with a couple drops of Worcester sauce and some nice chillies. Once softened, add a fair whack of coriander and a par-boiled chopped potato. Then add half a kilo of chopped carrots, about a litre of vegetable stock, stir and simmer for about 25 minutes.
When you're done and it's soft, blend it together (with more coriander), add salt, white pepper, black pepper and a pinch of paprika, warm it through and dish it up.
It works for me, but as you can tell, this is a fixer-upper.
If you have a cold and you want to get rid of it quickly, then fuck up horrendously by making one of the original chillies a naga jolokia. It'll be unbearably hot if you do that, but what you can taste is surprisingly good and it will clear your sinuses quite spectacularly. Also, your kitchen.
