The amount of salt in oyster sauce alone is enough to ward off most bacteria, so I see no problem with it staying out of the fridge.
I'd still keep it in the fridge anyway because I keep all opened sauces in the fridge.

Because they use it up too quickly for it to spoil. For a westener, who will make it last a whole year, it's best to refrigerate.
