8th round of the 5th Annual /ck/ Top Master Iron Chef Ultimate Nightmare Kitchen Survivor Challenge!

This is the first of the elimation rounds! If you are not part of the contestants still in the running, feel free to post along, however I will not be tallying the scores. But the more entries the better!

I've been circling the drain for a while now, I thought I'd be out a round or two earlier were it not for better competitors dropping out!

I'd just like to say thanks everyone for your votes, your critiques and thanks BubbleBurst for organising the competition. I'm definitely a casual cook and entered my first chicken wing dish on a whim (tragically my highest scored dish...!) but this competition has given me the inspiration to keep trying new ingredients, new cooking methods, and most of all, work on my plating skills!

Here are a few things I've learned in these past weeks:
- Presentation is definitely my biggest flaw. Any advice on this greatly appreciated.
- When trying a recipe for something you've never attempted before, never cut corners and follow it to the letter. You probably don't know better and it won't taste or look as good as it should.
- Picture quality makes all the difference to how your food is perceived. A shitty point and click, weird angles and zooms, shit lighting, etc, just won't cut it.
- Challenges with the most flexible interpretations (such as Fire and Childhood) were more fun to work with, and also for seeing how others interpreted them, in my opinion.
- Flambeing isn't as terrifying as you'd expect
- White truffle oil is still a meme
- There will always be trolls, and there's nothing you can do. I think a few posters replying and getting upset just fanned the flames and brought down the enthusiasm and camaraderie in the competition.
- That being said, never enter a dish that your grandma used to make and tell 4chan about it. I'm kidding!

Eyepatch here. I made Green Grindage. It's kale pasta with basil spinach pesto and sausage rolled in sauteed spinach leaves. There's a basil garnish in the middle, but it's hard to see. Everything was homemade except for the sausage. Timestamp and identifier incoming.

I'll be honest, the pasta was super soft because I had never made pasta dough with water before. I only cooked it for about a minute, and it was still super mushy. The spinach looks overcooked because I cooked it in the dirty pan I used to cook the sausage in, and the spinach got brown because of it. I almost was going to 86 what I made and try again later because so many things turned out shitty, but I just said fuck it and went with it. My work schedule has changed recently, so I couldn't cook on my days off anymore (tuesday and wednesday) because they are terrible days for this competition. The change in my work schedule gives me a lot less time to cook. I had to rush my cooking before work, and I just didn't feel like redoing what I made because cooking before work kind of drains me. I work in a kitchen btw.

Turmeric Fried Chicken and Coconut Ginger waffles, with maple ginger compound butter and hot honey mustard. Sweet and spicy yellow Kool Aid pickles. Mustard and horseradish mac and cheese. Banana pepper corn bread, and fried yellow tomatoes.

There was no natural light, so unfortunately the only picture options were between one using a flash and one using indoor lighting, that turned everything yellow regardless of how it originally looked.

Thought it would be fairly self-explanatory. Once the chicken is fried up, let it rest then baste with the hot sauce of your preference. Today I went with a Red Rooster Louisiana Hot Sauce. Considered a Franks Red, but Red Rooster is more authentic for this dish.

2 tbsp corn starch
1 tbsp garlic powder
1 tbsp onion powder
2 tsp cayenne
1 tsp smoked paprika
1 tsp ground black pepper

You don't want to salt at this stage because sweet potatoes are a very moist vegetable. The cornstarch aids in helping them crisp up. You run the risk of them getting soggy with oil frying them up so oven baking is a preferred method. After the get out of the oven, salt to taste.

I played along with orange, it was great because I could fry everything!

My entry: Wings 2 ways: Mango Chutney-Curry and Cajun Buffalo with onion rings and a dip. I really don't know what to call the dip, we use for crawfish, fries, onion rings, or pretty much anything really.

Nothing too original about wings and onion rings, and the presentation is what you'd get at the corner bar (not much you could do, except maybe turn over the onion rings to hide the spots where the breading came off). Still, you did the wings justice and the sauces/seasonings sound spot on. It's more than what I'd consider a serving, but I'd eat until I was full and eat the rest cold for breakfast (or in the middle of the night). Doing a full plate of fried food does seem a little cheap for the challenge goals.

You're the one being pedantic. The majority of the posters here aren't even photographers, let alone amateur photographers. Flash and non-flash is pretty much all they know. It affects the colours but there's not much they can do about it - other than fix the colours in Photoshop/Gimp and it sounds like you would be against that too.

I feel like your presentation skills have gotten worse (I liked your previous two entries). The elements here are too disparate and I think that just moving them closer together would greatly help. Part of it might be the tray you're always using - it's large so you might be trying to compensate by spreading out the food when you have smaller food items.

The fried yellow tomatoes look a bit pathetic. I think just halving them and frying them that way would have been better.

I definitely like the idea of coconut waffles. That sounds delicious. The other items seem kind of standard but I don't doubt that they're agreeable.

Ah, I can see you in the reflection of the spoon! I agree with the other Anon in that I would have preferred a puréed soup rather than a soup with roux, cream, stock cube and diced asparagus inside. I'm also scoring low on originality because you've already done soup this competition (twice in one round as well) so it feels a bit samey. I would have liked a larger image to see what's going on but from what I can see, the presentation looks really professional. I like how you didn't go just with yellow spices but also yellow vegetables. I like the sound of the vegetables too. My only negative comment would be that the beans on top look a little floppy. It's weird, because I think I'd like this dish way more than 11/20 but theres some things I can't get past. First of all, this is exactly what I was worried about when the theme was 'colour'. To me there's not much 'colourful' about this dish. Yes, there's varying shades of yellowy brown, which 90% of food is. My other issues are the fired tomatoes need to be in bigger chunks, and the mac and I'm just generally not a fan of your presentation over the past weeks. That being said, it looks delicious, especially the fried chicken.

Here's my submission based on orange:

Spicy alfredo with sopressata and peppers.

I made a simple alfredo sauce, spiced up with paprika and a bit of saffron. The sopressata cubes were sauteed with the peppers and a bit of garlic.

The rich taste of the alfredo was still great, but the spiciness of the meat and paprika made it better in my opinion.
For the pasta, I used cheese filled red tortellini.

Lastly, I decided to go for a small pallet of very similar colors instead of a single one since it adds a lot of visual appeal while still staying within the challenge goals.

At this point in the competition most people are doing things from scratch, so the curve goes up a bit. Also, using a stuffed pasta is like buying half your dish pre-made.

That said, when people do make things from scratch they should probably provide a picture of the process if they aren't going to do a vertical. I'm not at all accusing Eyepatch of lying (just an easy example), but he could have used dried pasta and grocery store pesto without anyone being able to tell, while the final dish would be completely different if you were eating it.

Thanks for all the feedback. I know the cutting board isn't the best for plating, but I really don't like anything else I have available so have sort of committed myself to using it (I also like having a big spread of different things); the plating this round definitely didn't turn out as nice as it was in my head.

I did the tomatoes the way I did hoping that one side would be yellow while the other side had a fried crust. In retrospect I should have dipped them in the batter first and fried them whole, then cut them in half so there'd be a crust on the outside but you could still see the yellow interior.

I'd never had horseradish mac and cheese before, but now understand why it's a thing. The yellow kool aid was "lemonade" flavor. I didn't actually try it because I used the entire packet, hoping it would speed up the yellowing process over the course of the 3 or so days (I still have a few spears in the jar and expect them to be full yellow after a week).

If anyone is curious, the ratio for the liason is 1 quart heavy cream to 1 egg yolk, meaning I had lots left over (along with other ingredients). Pic related is some mac and cheese I made with leftovers (I made a horseradish cheese sauce with pretzels last night). I cooked tomatoes and banana peppers in the rest of the compound butter, added liason, grated in horseradish cheese, then tossed it with cooked pasta and chives. Only freshly fried chicken could have made it better.

I think the way you arranged the food across the tray makes the meal look random and accidental rather than unified and deliberate. Interesting flavour combos, but as one anon said, it does feel like you dumped the contents of your pantry out. Nothing really speaks out to be the main focus of the dish either - am I focusing on the mac 'n' cheese or the chicken and waffles?
