ITT: I make Stuffed Portobello w/ Chorizo, Anaheim Chili Pepper, Cream & ColbyJack cheese, and Tomato
Ingredients:
2 Portobobello Mushrooms
5 oz Chorizo Sausage
1/2 Small Tomato (Diced)
1 Medium Anaheim Chili Pepper (Diced)
2 Tb Green Onion (Diced)
3 oz Cream Cheese
3 oz ColbyJack
1Tb Butter
Saute chili and green onion in butter for 5 min

Add Sausage and Tomato, cook for 7-10 on med-high
Reduce temp to low and add cheese
Mix completely
Fill Portobello and bake at 325 for 17 min

Looks runny, almost soupy. It's like queso filled mushrooms. Don't know if I agree with the cream cheese. Weird textures, etc.
