I usedta make quesadillas with one of those red, Target-tier appliances. The last time was about two years ago. The cheese bubbled over and out all over the place. I threw the whole thing away, appliance and all.

Fold bottom over filling, Fold in sides over everything, Roll tightly. I like to add a bit of cheese to the final edge so it seals while it's being grilled.

I make them relatively often. Sometimes I just can't stomach it, though (I eat too much low quality cheese so sometimes my stomach just feels fucked up)
I tend to prefer them with less cheese, maybe a little sour cream on the inside with a touch of garlic powder. Also, some people cook these fuckers with oil and I just can't stomach that.
