What's the best kind of cheese grater to get?

South Italian/Barese-style grater, preferably with two plates, one for hard cheese like most stravecchio types, and one for firm cheese, like Gruyère and cheddar. And with at least six side holes on the plate. This one looks to have only two.

Alternately (and I know this is gonna catch flack from some of you) let it sit out a day or two before cleaning. This way, cheese stuck in its grooves will dry out and shrink a bit, falling out on its own/more easily, making it easier to wash. I don't eat grated cheese every day or even every other day, so this works perfectly fine for me.

Microplane makes a cheese grater, but it honestly kind of sucks.
Only good thing about the design is that the back side slides out so you can use it like a classic microplane and also easily clean the inside of the box.
People suggesting a microplane as a cheese grater have no idea what they're talking about.

Hands down one of the best kitchen purchases I've ever made. I use it for just about everything, but it makes seriously short work of grating any quantity of cheese.

I process veg with mine all the time. Soft veggies dont hold up unless you sharpen the edges. The only thing mine won't handle is tomatoes - those just turn to mush.
But for potatoes, cucumbers or peppers? Shreds them just like cheese.
And actually, the real question is how does one grate real mozzarella? Nothing cuts it, it just rolls into a mushy mess.

Even in Italy, there are two varieties of mozzarella: fresh (IE wet) and dry (IE for slicing/grating and pizza making). You can't run the fresh stuff through any sort of grater, but dry works just fine in my boxy-type grater.

For some reason I was the only one to come up with the obvious idea of putting the goat cheese in the freezer for 15-20 minutes before breaking it up to put on salads. Before that they were serving giant clumps that were all stuck together and looked obviously manhandled.
