My mom and my biology teacher told me to cook ground beef through.

But the Bourdain technique episode and that dude on Munchies both said to cook hamburgers to medium rare, like steak.

So, my mom is wrong right? Do you have to make ground beef brown to kill bacteria?

You run a gamble every time you eat a burger that's more than just slightly pink in the center (if it isn't coming from a reputable establishment).

Burgers =/ steaks. What works for one does not for the other.

The reasoning for cooking ground meat well done generally is:

Bacteria and stuff sits on the top of meat and doesn't penetrate deep into it. When you grind it for a burger it all gets mixed together and potentially all that meat is now exposed to it. Also now there is significantly more surface area for bacteria etc to get on.

Add in if you are getting it from a store, who knows how long ago it was ground, how clean it was etc.

Up to you if you think it's worth it.

Cooking a burger to medium or well don't ruin it if you get a high fat ground. Just so be going and pressing down on the meat with a spatula when you're cooking. The only time you want to touch a burger on the grill is when you're putting it on, flipping it one time only, and taking it off the grill. I make Burgers with no binder at all mate.
I just sprinkle in an oxo cube. mix with cold wet hands then make into patties. Try and make them dented in the middle (so it looks like a red blood cell???) - throw into the fridge for at least 20 mins.

Makes no sense whatsoever. Ground beef has to be cooked well done because the contaminated surfaces are now distributed throughout the meat. The only way to make ground beef safe for lower temperatures is to sear an intact piece of meat on all sides and then grind that

quite the challenge but the bean burgers i made came out pretty okay.

The FDA says that beef should be cooked to 160 degrees to kill e-coli, but that's being over-cautious.
If you freeze the ground beef before-hand, it kills most strains of e-coli and the rest die at about 130 degrees (medium is typically 140-145) due to temperature shock.

If you want a rare burger, you can buy a cut of meat at a grocery store and ask them to grind it for you.
The problem isn't the surface area so much as the number of cows the meat comes from. A cut of meat will only have e-coli if the one cow that produced it (or possibly a small number of other cows whose meat came in contact with your cut) was infected, but pre-ground beef usually comes from quite a few different organisms.

FFS, OP it's all about risk. Cooking a burger well done is safer than cooking one to a lesser degree, but the chance of getting sick from an "undercooked" burger is minuscule.

ground beef is usually 3 dollars or more a lb, when its cheaper its pretty shitty, but even accounting for something under 3 dollars you can buy almost any good pork cut besides loin and chops for that kind of money, and I'd rather do pulled pork "burgers" with 89 c a lb carnitas from pork shoulder, or chicken, from 99c chicken thighs, or ham, or bacon ends, or sometimes, even bacon. even some of the cheaper steaks and beef roasts are cheaper than ground meat.

This is actually probably a decent way to go about this, providing your grinder is super clean. Most bacteria are on the surface of big cuts, meaning you can sear the surface of a steak and kill most of the bugs. When you grind larger cuts, the bugs on the surface are redistributed throughout the meat, meaning they aren't killed with a quick sear, you have to get the center of the patty to a high enough temperature, and thus a higher doneness.

Steak if fine to eat rare because it's unprocessed, only the exterior is exposed to bacteria which are killed in the searing process.

Ground beef is as you may expect, ground so the original surface area of the beef is mixed together with all the rest, causing potential bacteria to be impregnated into the entire quantity of meat. This is why it must be cooked through, rare burgers is a trend but its pretty retarded.

Gourmet burgers shouldn't = undercooked.
