Ramen and chinese noodles go really well with cheese. I think that the only reason recipes traditionally don't contain any dairy is because dairy isn't popular in east Asia, people can't stomach it or something, I don't know.

Yea I did this all the time growing up. I'd personally recommend some really sharp white cheddar, best one. Avoid mozzarella, I haven't tried gouda but I can see that being great too
