....hate to be the bearer of bad news but all Ethiopians ate the same foods for most of the year because the Christian orthodox calendar banned animal derived foods for most of the year.
Spices varied somewhat, pure white teff may have been eaten more often but otherwise same food.
Gurage don't use alliums though and meat is rarer amongst the poor but the latter is everywhere.

Oh and I'm experimenting with Ethiopian food some more like last thread.
Working with fermented butter milk to make ayib and paneers, working on more spice blends for lentil dishes more Mediterranean herb combos but also I was frying chicken skin in ghee and the resulting fat is actually really great I topped some of it over spinach with a mustard dressing and goat cheese, it really worked wonderfully.
Thinking about Ethiopian spices and Chinese food too any idea of making dishes?
If I were a mod on /ck/ I would start an African food thread and ban everyone who thinks their /pol/-tier memes are so hilarious they need to shit the board up. 'Asida' is the boiled wheat flour thing in the middle. You rip up bits of bread, take a bit of the asida, dip it in the sauce surrounding it (usually some mince meat thing, but can be molokhea) preferably whilst touching as much of the food as possible with your dirty hands

Why anyone would willingly eat African food is beyond me.
There's a reason that content is the least developed. There's a reason the locals eat bats and any other random wild animals (called bush meat). Whereas western or eastern food has had thousands of years of development by people who actually had practical applications for the wheel, Africa has nothing.
