You can use the fries to soak up the juices from the moules. They also offset the moules' texture, giving the dish a nice crunch (if done right).

i used to think that but there's other good ways as well. the best ones i've tried were with chorizo&tomato sauce and cidersauce. some sort of thaistyle, coconutmilk/cream,cilantro and lime was really tasty too. had the last one in a restaurant about a year ago so i'm not 100% sure how it was made or what was in it.

Delicious. My favorite version is moules epices and frites. There's a great bistro in my neighborhood that makes superb fries. Moules au Pernod is another favorite, but I prefer baguette with those.
