every one of these recipes made by kenji is bound to be delicious. the key is to avoid supermarket carrots for dishes when you're glazing them, or at least keeping them semi-whole.
you want to get small carrots, preferably at your local farmers' market, and see if you can find carrots that spend the winter in the ground. these will be much sweeter, since root vegetables (like parsnips, beets and daikon) undergo a process which intensifies their flavor below ~50 degrees F.
I usually just peel them and eat them raw, I don't think I've ever eaten a cooked carrot. I like the crunch.

Carrot soup.
1. Chop a bunch of carrots and maybe half a yam and a parsnip
2. Bring a pot of water to a boil
3. Add better than bouillon to the water
4. Throw in the chopped carrots and stuff
5. Boil it until everything in the water is easily mashed with a fork
6. Use immersion blender to blend up everything and make it smooth
7. Add in a bit of curry powder and some coconut milk
8. Put into a bowl and eat

If you're feeling fancy, instead of using better than bouillon, I like to start with roasted red pepper, caramelized red onion, and celery, deglaze with red wine, add water, and simmer with some mushrooms to add more of an umami taste. Make the soup fairly thick and a bit more spicy than otherwise and serve it over coconut jasmine rice.
