Today was a simple day.
I was lazy tonight, didn't feel like doing a lot of work.
Took 3 boneless chicken breasts and put them in a roasting pan.
Tossed in some rough cut mirepoix, salt, pepper and sprigs of fresh rosemary and thyme.
Into the oven with 3 cups of water and cover with tin. Added the water to make a stock for later use this week.
Side dish was a sofritto ragu pasta with some lemon juice to brighten.

I really like this food. It's easy and taste really good.
Just ate some kalamata olives, beanitos chips, and drank 2 cups (4 bags) of Tapal Danedar tea. It's kind of early for dinner where I am.

a granny smith apple sliced and salted, sliced moz and aged white cheddar
Nothing all day then gym then 4 home made caramelized onion and Parmesan beef burgers topped with melted cheddar on sesame buns with red onion fried egg, garlic mushrooms with parsley and every condiment and relish in the fridge on the side(caramelized onion relish, American mustard, Sriracha, light mayo, BBQ sauce)
Worth the wait.
