I wanna eat more fish, but I don't know many dishes to make. Give me some good fish, nothing too complicated.
put the fish on some kind of metal object and expose it to heat

You should also add a little fat to evenly distribute the heat, and avoid the fish from sticking to the metal object.

Beer battered fish.
One can of beer + one cup of flour + one egg + seasoning. Stir mix until batter is formed.
Dip fish in batter and fry.
Monk Fish
Tastes like lobster if cooked correctly.
Also try wahoo, halibut, white bass, cod and swordfish.
Butter in pan.
Bring to heat.
Add rosemary sprig.
Fish.
Sear both sides.
Finish in oven, 375F, 8 minutes.
Dress with purée of choice.

What if it's a fatty fish

Non-stick pan, season to taste, high heat.
Fatty fish isn't like fatty meat, you don't want to render out all that deliciousness.

If you're cooking it on a trashcan lid over an open fire you're still going to want to add a little fat.

Cast iron.... Get hot. Sear each side for 3 mins (may vary depending on thickness of fillet), done. Marinate or season before to taste.
Kroger generally has pretty good sales on salmon, tilapia, and flounder if you're interested. Also swordfish sometimes. Assuming you're from the US.
Just bake some salmon nigga, easy peasy.
Let it soak in a bit of basalmic vinegar and honey or whatever, shit son now you've got a marinade AND a glaze
