Lunch at Ted's Cafe Escondido in Oklahoma City
I've been eating at this place pretty regularly for about 17 years. It is unquestionably the best Tex-Mex I've had anywhere and the service is ALWAYS flawless.

Usually it's at least a 15-20 minute wait to get a table but we beat the after church rush by a few minutes and got seated immediately
each table is give a complimentary "set up" of tortilla chips, queso dip, salsa, escabeche. flour tortillas and corn tortillas

Ted's is okay and all the free shit they give you is nice, but honestly it doesn't really hold up to more authentic Mexican food
The "atomic salsa" (on the right) and habanero salsa are available upon request. both are hot as fuck and have excellent flavor

I know this probably isn't a popular opinion but I think that Tex-Mex is a completely legitimate style of cooking and when well executed deserves to be treated as such. No one is claiming that any of the typical dishes would be found on the streets of Mexico City and that's not the point.
I like to butter the tortilla, add a crushed up handful of chips, some queso dip, and some of the habanero salsa
My buddy and I both had the fajitas (chicken and beef mix)
I had spanish rice and grilled vegetables as my sides
The fajitas were perfect
