I watch a lot of Japanese cooking videos, and noticed that the sugar is different than the kind I'm used to seeing, it's more clumped. Is this some special kind of baking sugar, or is it caused by Japan being a more humid country or something?
>>
japanese sugar comes from a different plant altogether. refining it is very expensive. thats why you dont see it in the states very often. the plant is called a lulurgi flower and the sugar is refined from the bottom 3" of the root. its super weird. the "clumping" is a result of natural earth-ridden tecazotes that form when the sugar is refined. although most consider japanese sugar to be actual crystal sugar, its more like a viscous hardened gas.

"normal" dried table sugar is ¥50 more expensive and Japanese housewives are nothing if not thrifty.

Looks identical to our (Dutch) white basterdsugar, although that's a regional product too.

Probably just clumped up because of the humidity

Not exactly :

> But be careful. The photos shown above are not of table sugar (=granulated sugar). Called "jobakuto" (上白糖、じょうはくとう), it is a type of white refined sugar most commonly consumed in Japan but rarely found in any other countries (I don't know why). Containing 1 percent of water and invert sugar to prevent clumping, johakuto is more moist and sweeter than granulated sugar.

That's the same as our bastard sugar. It looks clumpy but it always remains soft. Unlike powdered sugar, which needs some E-number anti-clumping agent if you want it to have shelf life.

Probably because it helps googling when someone spoon feeds you the correct characters. At least I've found this to be helpful when looking for other foreign foods, since transliteration results in horribly wrong google results.

Why do white people trip over each other trying to prove how little they care about some island's culture? This isn't a dating site, it's an anonymous shitposting forum, nobody gives a shit that you masturbate to cartoon porn 3x a day. Just cool it with the I'M TOTALLY NOT A WEEB routine, it's so fucking tiresome at this point.

Because he is trying to teach foreigners what to look for in Japanese department stores.

Weebs and a stroopwafel. Knowing the Japs they probably copied it from us.

Any way, it's a useful ingredient. It dissolves almost as fast as confectioner's sugar, but without the off flavor from whatever they put in there to prevent clumping. Good for Chantilly cream.
