Cured: eat it as is. It's a Mexican salami.
Uncured: cook it innaskillet at medium/medium low until it starts to turn black then, if it's not too oily, crack an egg on it and mix it up. If it's really oily, I recommend scraping it out of the pan onto some paper towels and blotting it. Eggs tend to get a bit of a shitty texture if you add them to really greasy chorizo.
