I doubt this is true for all kinds of juice, but many start to lose quality very quickly after the juice is made. Keeping the fruit or veggies "intact" and juicing at the last minute gives a better quality juice.

for example, oranges contain their juice, but also various enzymes and other chemicals. When you juice an orange the various chemicals from different parts of the orange mix and those enzymes start working. This creates a chemical called limolin which is very bitter. Thus freshly squeezed OJ tastes much better than OJ that's been sitting around for even 30 minutes. (Source: On Food and Cooking by McGee, pg. 375-376) I'm sure there are similar things happening in other fruits and veggies as well.
