you're only at a strong risk of getting somethign from your meat if it's ground up.when it's a solid cut all the bacteria is (to my knowledge) at the surface and gets cooked off. as opposed to grund mean which has all the germs in all the places

I go for medium rare like any other reasonable steak-eater, but I think medium is at a comparable level. I wouldn't be an austist about getting a medium steak at a restaurant. the flavor in a medium rare steak is obviously superior, but the mouth feel and bite profile of a medium steak just unleashes this primal feeling in my jaw unlike any other, while still being plenty flavorful.
