I go for medium rare like any other reasonable steak-eater, but I think medium is at a comparable level. I wouldn't be an austist about getting a medium steak at a restaurant. the flavor in a medium rare steak is obviously superior, but the mouth feel and bite profile of a medium steak just unleashes this primal feeling in my jaw unlike any other, while still being plenty flavorful.
