I've worked in plenty of mediocre places where my normal response was "yep", and I always got made for of it.
In a real kitchen you address the chef as "Chef", and answer "yes Chef", "right away Chef", "two minutes Chef".

Don't be afraid to be a dishwasher for a little while first. If its a restaurant with a good team, makes everything go easier.

Why don't you get a job as a prep cook (all you need to know is how to hold a knife), get trained on kitchen duty while getting paid at the same time, and after 2 years realize that you are still light years from being able to run a section, let alone a kitchen?

Same experience honestly, I've had a number of restaurant jobs and nobody ever called anyone 'chef' and if anybody insisted they'd probably get laughed out of the building.
