I made chicken enchiladas. Homemade tortillas, enchilada sauce, and chicken stock for the sauce. Took all day but damn was it worth it.

Haven't made it yet but planning on making potato salad and for desert, a lemon cream swiss roll covered in vanilla frosting.


I'm trying to push myself to avoid using any pre-made ingredients and do everything myself. Only exceptions are things I don't have the tools to make myself at home.

Made burritos from scratch. Started with dry pinto and black beans, cooked those with cilantro and onion for about 4 hours until they were there right consistency. Made my own spice mixture because store packets taste like ass and salt and browned some ground beef with that. Then made some cilantro lime rice. It was simplistic, but me and the grill fiend enjoyed it.

This. I was going to make some flour tortillas. I like to eat them plain from time to time, but I got adventurous with the proportions and ended up with dough that had a bit too much oil and not as sticky as it should be. So I rolled it up, cut into pieces and baked them. Ended up with not-sp-bad crunchy salted breadsticks that I'm having with some sour cream. Had I added some more spices it would have been even better.

Sounds good to me. Dry goods have a really long shelf life provided they stay dry and vermin free. Unless it tastes really off you'll be fine.

the filling is basically ricotta cheese, cooked wheat and custard (or eggs and milk added to the cooking wheat, or whatever, its done differently by every family), with firmly whipped egg whites added last. Aroma is given by minced candy cedar and orange, orange water and a bit of cinnamon. Crust is basically sablé shortbread

Roast is done. Should've cut down on the roasting time but damn the marinade definitely saved it. Glaze is a mix of maple syrup and mustard.
