I've never had it, but my understanding is that it's shitty meat. I know a lot of rednecks who will eat all manner of game (and roadkill, if it's fresh) but they won't touch possum or raccoon.

It's delicious when prepared properly. With no seasoning at all it tastes kinda like pork teriyaki but with a much lighter texture. If the critters weren't so dang hideous I'm sure they'd be much more popular.

Their flavor varies depending on what they've been eating. Hillbillies live trap them, feed them on corn pops and milk for 2 weeks before slaughter to make their flesh taste even sweeter. Also, just as an FYI you might not want to shoot too many on your property. They're important for controlling ticks if you're in an area that's prone to them.

Honestly, never heard of that and I'll have to read up on it. They can hang out in the woods and that's fine....but this one was getting all over the porch, getting into everything, making messes, knocking things over, setting the dogs off. It had to be done.

It really is. I actually got diagnosed four years back and they prescribed me a month of antibiotics but I was a stupid teenager and didn't finish taking them because they tore up my gut so badly.

Last 6 months I've been ultra sluggish, need at least 10 hours of sleep every night, severe concentration problems that I never had in college, etc. Got some blood work done after I found another tick on me and they said I have a bad case of acute lyme disease that I must have had for a while now. Currently on week 2 of an 8 week antibiotics course. Every bowel movement is an ordeal.

People have been calling them delicious since colonial days. Most folk just stopped eating them in the early 20th century after they started being more concerned about the cleanliness of their meat and it became stigmatized as white trash food.

My city council's minutes from the 19th century discuss annual 'possum dinners held by the aldermen who considered them mighty fine eatin.

Its not the thrown out food thats the problem, but rather the other fucked up shit we throw away. Chemicals and other toxic shit that stays in the animals' system, much like mercury in some fish.
Thats not even mentioning the other really fucked up diseases possums can carry.

As you've heard OP you can eat possum just fine. William Taft did while gathering support for his presidential run. Teddy Roosevelt had gone bear hunting during his term and a story of him being merciful to a starving bear became hugely popular in the press (it wasn't true - after letting the chained-up starving bear go, he had someone shoot it anyway and they ate it for a week). Eventually someone decided to make some money off the nice mental image it conjured up, and made a soft toy: Teddy's Bear, which was the start of our good old teddy bears we have today.

Anyway, the soft toys and the story had been a great thing for Roosevelt's popularity, and made a lot of money for toy manufacturers, and so people looked for a similar thing for his hand-picked successor. Well, he went down south for a big feast and was served a massive roast possum, which he consumed, and enjoyed, and after he was done he was presented with a possum plush toy. They manufactured shitloads of these possums and shipped them out, along with live possums in cages for the people in the cities who had never seen a possum before to gawk at. It was a total flop - obviously too artificial and a story about a guy eating a whole possum doesn't capture the people like a president being kind to a starving animal. So after a short while they just dropped out of circulation. And that's the story of the teddy bear and its successor that never was, the Billy Possum

Another good way to eat possum is bake till tender, shred the meat. Mix shredded possum meat with some leftover roast, and shredded pork (1:1:1). Heat this meat mixture with some onion, and carrot, a little potato if you want. Salt pepper, etc. Now stuff this meat mixture into some empanada dough and fry it up. They make delicious little meat pies.
