I eat out alone pretty often, every other week or so.
I usually go to low-key places that aren't very formal, so it's not unheard of to see yuppies like me stopping in for a bite alone. Sushi or a local burger/wing joint.
I just eat and browse 4chan on my phone. I order alcohol and generally tip well, because for some reason when I eat alone, the waitress is always hyper attentive.
I know I'm not one of those shitty tables waiters bitch about(one person, cheap food, water only), because I usually get alcohol + a meal, so they know the tip is going to be decent.

When I eat alone I take a book with me and read when waiting for my meal and when finishing my drink afterwards. .
Most people are not judgemental, they simply don't care what other people do with their lives. In my experience wait staff don't care either, they might not get much of a tip from a single table but it isn't much work for them either, it balances out.
As for general non-spergyness tips. It's all about body language. If you look calm and confident then you can do pretty much anything you want and people wont think it's weird.
