A go to is a strong, very mature, Cheddar. I've also recently become partial to a good quality aged Double Gloucester.

I leik all cheese, though I'm partial to bleu, chedder, swiss, and gouda.

Even if you're a, "the stinkier the better" kinda guy, Limburger has a reputation for a reason.
I'm okay with it, but it's nothing amazing and is definitely an acquired taste.
Had a very pungent cheese lately, Rubens, somewhere between a brie and a Limburger. Goddamn amazing with decent Gueuze beer.

Mimolette or gouda. I like smoked cheeses, but the smoke drowns out a lot of other flavors to where the quality of the cheese itself matters less.
