Frozen!


Create a dish where the main ingredient(s) are start frozen. There are no restrictions or requirements, as long as it seems like a pleasant thing. While you're perfectly welcome to make a large spread of food, please make sure there is clearly a "main dish" because that is what people will be voting on.

This is an open round, meaning that anyone can enter. Elimination don't begin until after Round Three.

>This is balsamic honey roasted pork with a spinach puree and pickled dill, with a side of pickled stuff (cabbage, tomato, olives and watermelon), and shallots. The pork is from my dead pig friend we killed and froze a few months back, and the spinach puree was made from spinach I found in my freezer. All the pickled shit is homemade too. If I need to prove the pork/spinach was from frozen ingredients I can take photos of the packaging, but I'm really lazy and want to drink beer in bed.

>so it's a quesadilla. Main frozen ingredients are shrimp, mango, and a fajita veggie mix all thanks to HEButts. Also inside is a mix of chona and oaxaca cheese, chili serranos, and lime juice. Side is some mexican coleslaw with nothing frozen in it so idk if I should have even included it but it had sour cream, even mix of red/green cabbage, cilantro, lime juice, carrots, and was something tasty to scoop up with the quesadilla. Little garnish with a mango pico de gallo and some guac. Also bought frozen strawberries and made a margarita cause why the fuck not.

>Moqueca/seafood stew. Not 100% true to the traditional recipe, but this is how I have been making it for years. Usually I use bacalhau in the recipe, along with fresh seafood but utilized frozen seafood instead.

>Iceland Delight, as it is somewhere between British and American food, and because of the British frozen food brand, and there’s also a flyover joke in there somewhere if you fly anything other than Iceland Air.

>It’s a beer battered, deep fried, three pepper, macaroni and cheese topped frozen pizza, along with a garlic and basil mushy pea gastrique.

It's a nice concept but completely the wrong way to serve frozen fish. This format is best for fresh fish to really show it off. I do like the sound of the pea and mint mash though but it looks a bit dense.

The appeal and originality are tied here. It's a fish finger sandwich and I know what they taste like - they taste okay, and are elevated by using fresh fish (obviously not really a valid option here) or with herbs, which I don't see in the fish fingers. The spicy mayo also is not appealing, just cheap.

Yeah with other ingredients, I also stated that is perfect I have been making it for years because it's not a true out of the book Moqueca recipe....plus I'm not going to go out of my way to buy a shit ton more of frozen ingredients. Too poor for that. I cleared out almost 35 dollars worth of frozen seafood out of my freezer for this.

It doesn't say it in the rules, but it isn't original and as far as my scoring method you only ticked off one point for that. When all is said and done, you really didn't transform any of your ingredients besides taking them from a frozen to a cooked state and you cooked them all the same way. Don't take it personal. It's one vote. If you served this to me as a guest I would be thrilled. Maybe it seems harsh, but I'm trying to be objective. Learn as you go.

It's nothing special, but it looks like it was done right, and I would be very willing to consume all of it.

The one thing that kind of irks me is the cheese everywhere. You could have very easily grated the cheese over it and then moved the cutting board to where you wanted to take the picture so that there wasn't cheese all over the table.

Constructive criticism is entirely welcome.

The only way you'll annoy anyone is if you only judge some of the entries, so it's your call if you want to go through and judge everyone or not.

It seems like most people prefer to judge entries as they come in so it doesn't seem like a chore at the end. Then again, scores are likely often biased depending on the person voting's mood.

In any case, the more people involved, whether entering or voting, the better.

not directly talking about you or anybody really, i posted mine in last thread and i still have like 3 votes total when there are people with 4 votes just from this thread, im being autistic tho

also read a guy giving a low score earlier that mentions "i dont like this thing thats why a low score on appeal" just kind of rubs me the wrong way because people put in the position of judging food are suppose to have a pretty open palate or whatever and not be bias at something done with creativity in mind.

Here's my entry. I'm the pirate eye patch guy from last round. Pic with timestamp and identifier incoming. This is Shepherd's Pie. I made it with frozen meatballs, frozen mixed veggies (peas, green beans, carrots, corn), and frozen mashed potatoes. My original plan was to use hamburger patties, but they didn't have any at the store I went to, and the closest thing I could find was frozen meatballs.

I had a really great, imaginitive idea for this round but due to work commitments ended up only being able to use what was already in the freezer (not a lot). In fact all I had that could reasonably be used was frozen peas and some old bacon.

So...
Pea and bacon soup, of course. No vertical. Briefly, sautee half an onion and some bacon in a saucepan, deglaze with dry white vermouth and reduce to a couple tablespoons, add half a pint chicken stock, add frozen petit pois, cook for only a couple of minutes to keep the freshness of the peas. Then strain, add a little cooking liquid to the solids, and blend. When smooth, add back in remaining cooking liquid until desired texture is reached. Season to taste. Finish with a tablespoon or so of cream and some crispy bacon bits.

I've gagged every time someone used frozen mixed vegetables, but frozen mashed potatoes might just be worse. That said, I'll never refuse Shepherd's Pie as long as it's properly seasoned.

It does seem a little dry, and for the presentation I'd recommend grating some Parmesan on top and throwing it under the broiler for 10 seconds to give it a bit of color and a little crust to hide the texture of your potatoes.

You didn't do anything over and above simply preparing frozen food the way it was meant to be prepared.

The entry that used dry ice / a fire extinguisher got extra points on challenge goals for doing more with the "frozen" theme, for example.

I've judged everyone else according to the same standards, so it really shouldn't make a difference. It's just how I interpreted this round and I ran with it.

Chicken Liver Pâté

chicken liver

These are kind of a reach, but I happen to keep them in my freezer:

cherry bark
butter
bay leaf

Although it's not an ingredient in the pâté, the olive salad in the pic was thawed in the last hour. Made too much last month.

I took pics of the process, but I don't think I'm going to start a thread about it.

I regret it very much actually. I had more than enough chicken to make another one but was running on fumes. I'll take whatever dings I deserve on points because of it, I'm not too worried. Just a friendly competition after all. I'll know better next time. There were certainly some things I could have done better in that dish apart from that one mistake too. Every meal is a learning experience though, and every mistake a lesson.

The bread doesn't look that great (too thick, shouldn't be toasted, and the crumb looks too dense), and the pate is a little too pink for my taste, but this is still one of my favorite foods and I would probably destroy that entire platter.

Just a TAD prettier. I think the way the meat is lined up was a bit awkward, and that amazing pea freeze was just piled on. I'm not an expert and I would have given it a perfect score. But maybe I personally would have like the pasta twisted on top of the meat and shattered the pea a bit more and put that over the pasta. Sorry if I upset you bubbles.

I just thought the pasta looked way tasty and would have loved to have seen it displayed better over the meat. Meat is good, but that pasta was bomb. And I want the heat of it all to melt the pea freeze a bit, so that's why I would have liked it in top. I don't know how else to explain it.
