Oversalted. Poor rice texture. Dehydrated vegetables reconsituted texture. Convenience.
I've had all the Zatarains from buy one get ones (and my hurricane season survival pantry stock that I build up each August, but eventually have to eat through). They're really missing some of the oompft of browning and the roux. In the case of jamabalaya, I consider the bay leaf flavor essential, and it's missing, but you can add one while cooking. I also like to use whole tomatoes in mine, for the lumpy texture, versus the chopped. The boxed mix really just has tomato powder flavor from the packet. It works for a nice quick one dish dinner, I guess.
If you want something kind of unique in a mix, the Goya Caribbean rice has coconut and saffron in it, and pairs nicely with a pork roast/jerk/mojo pork roast.
