It was later that people started putting whole anchovies right on top of the salad next to the croutons, because anchovies are delicious.

Yep. I'm actually a snob about it. When I buy it am constantly frustrated that many brands contain no anchovies. Then there's the ridiculous idea of "vegetarian worcestershire". I've even made my own before (not worth the effort, IMHO).
It doesn't lack the fishy flavor because of dilution. It lacks the fishy flavor because of the fermentation process which breaks down the "fishy" flavors. Ever had Asian fish sauce? Fish is literally the first ingredient. There is zero dilution, it's the juice collected from the bottom of a vat of salted fermented fish. And it doesn't taste "fishy" either. It tastes savory/umami.
