i posted this earlier in a butter thread..

at work, to make creme fraiche, we do:

1 gallon heavy cream
1/2 cup buttermilk

whisk together, leave at room temp for two days. that's it.

i eat it constantly, customers eat it constantly, it's all good. quit being such a fucking faggot. like >>7472062 said, the cultures need to be able to develop to change the cream into sour cream. what the fuck did you think sour cream was?

do you also not eat lacto-fermented foods?

Does any local super market have full fat whole Fage Total Classic greek yogurt? This would be a great substitute. Don't bother with any other "greek yogurt" a lot of them aren't strained and use binders and fillers to thicken the yogurt, which will in most cases turn into a mess if heated.

Sour cream may not work, it's lower in fat content than creme fraiche and will most likely curdle up if heated.

lemon juice and sour cream make a quick shitty cf, zest is good too.

I do 4l cream 1l buttermilk with 4 lemons+zest and salt, 2 days at room temp and strain, makes a good batch.
