Well, you should be aware that some spices/herbs lend themselves more to some meats/vegetables than other spices/herbs. You don't need to use everything, a lot of spices' will overpower each other.

Try to stick to a few spices at a time. The flavors are more noticeable when you don't have all these other flavors trying to drown them out. It's like a band. If you have a bunch of people trying to play loudly over one another, you can't appreciate each indiivudal spect as much.

I'm happy for you. I've never had any luck with dried basil. Personally though, fresh basil seems to have a much stronger flavor, so maybe that's what's been setting me off. I know for sure that dried oregano works just as well as fresh, although it may be less presentable. Still tastes as good.
