Hi /ck/, I need some delicious vegan meal ideas. Preferrably something somewhat unique. So far my ideas are some type of Mediterranean/middle eastern plate with falafel and some other stuff like tabbouleh and whatnot, or something involving some pickled veggies and something (?) more savory covered in the mushroom shallot sauce shown in that tripfag's thread who was cooking those filet mignons.
Obviously my two ideas have a lot of blanks that remain to be filled in. I was hoping you guys could give me some ideas. Thanks

mate a dhal, curried cauli and rice is a pretty good time.
There are heaps of Indian recipes that kinda look like poo but are very tasty and quite easy to make.
For my dhal I sweat an onion in a little butter (as you are a faggot you can use olive oil) and once the onion has softened I add a bit of mustard seed, fenugreek, cumin, turmeric and a cardamom pod. Then I add a tin of diced tomatoes, and two cups of dry red lentils.
Four cups of stock are added, a light chicken or a vegetable stock or mushroom broth. Bring it to boil, reduce heat and cover.
Add a little more fat after twenty minutes and stir.
