Chef here, I work in an open kitchen right near the front of the restaurant, so people coming in and leaving can literally talk to me, while I don't mind it on a slow day and will actually converse with a customer if its really slow, when I'm busy its kind of a hassle.
For example on thursday all of our 45 reservations were between 6:30 and 7, literally packed house and I was running 3 specials, a lobster nicoise, an octopus fritter, a spicy crab baked oyster, and for an entree I was running a branzino with a sea urchin butter. A table of 4 who was first to arrive, eat and leave(they had tickets to a theatre show for 7:30 so had to be in and out) had one of each special, and one of the guys at the table happened to be(according to his wife) an amazing home cook, and he had all sorts of questions about the food.
I unfortunately had to tell him that I'm really busy right now but he is more then welcome to come back after his show and talk more if he wanted too, not that I wanted to but you gotta make people happy right, and he understood. Didn't come back that night but the same name is on the open table for wednesday so I guess theyre coming back, which is good.
If you see guys standing around cracking jokes you should feel free to compliment them if the food is good, but if they're hard at work a "great meal guys" in passing is totally fine, even the busiest cook or chef will have time to say "thank you have a good night" ect.
Personally I could live without it, but it is nice every once in a while when you make a dope dish and are praised for it.

I've only done that once, at the most unassuming diner ever. I was working in the middle of an industrial park, and passed this diner that had some strange asian influence over it. I went there for a chicken fried steak and some coffee. It was once I was in there that I saw so many weird Vietnamese dishes fused with traditional diner fair that I had to try.
So I got a french dip sandwich. And the au jus didn't just use beef stock and drippings, but it used miso, and the meat was bulgoli. And the chicken fried steak used panko. And the breakfast bibimbap, with sausage, brocolli and cauliflower florets, and a bit of sour cream was amazing.
I went up and hugged the little Vietnamese lady cooking.
I'm not sure what happened there, but her husband was a piece of trash who made her do all the work, so god knows what happened to the place.

I used to work in a kitchen where the passover was pretty close to the bar and dining area. Usually people would wait until around 8:30pm when they were leaving to let us know so we were just doing desserts but a lot of people would come up to the head chef and tell him how much they liked the meal.
It was also a rural town and a lot of the people were regulars so that might have had something to do with it, but it was cool to see nonetheless.
