If it takes you 15 minutes x 2 to sharpen knives with a stone then you're doing something very wrong.

Last weekend I pulled out my stones (3 different grits) and sharpened 6 knives. I was done with all 6 in less than one 30-minute TV episode I had playing in the background. I do this about twice a year. Otherwise it's a quick (just a few seconds) touch-up with a steel aka "honing rod" for you autists out there.

I'd say a hone is worth it no matter what sharpening technique you use.

A hone straightens a microscopically folded or bent edge. If you look at the image of the ceramic sharpener, you can see the edge is going to fold and buckle a lot more than the factory edge or the wicked edge.

If you're using whetstones or a wicked edge, a hone lets you go longer between hour long sharpening sessions.

Professional cook here Op. In my knife roll for work I keep 2 pull sharpeners. Both by Smith's, one is large and does standard, santuku and scissors, the I have a tiny one I keep in ky pocket for when I loose track of my roll during shift.

To put a good working edge on your knife when you are busy it works well. At home I use a steel or file. They work, most working kitchens I havr been in have a bunch of them floating around.

I like my whetstones. Personally I find the act of sharpening my knives cathartic, but I also like cleaning my guns and reloading so maybe I just like repetitive tasks that I can do while zoned out slightly.

To be honest my problem with that type a sharpener was that it would get the knife sharp but I could easily destroy the edge of a steak knife cutting steak. It seems that those type of sharpeners somehow put a fairy fragile edge on the night and you have to do it so often that's not efficient.

1) ceramic knives still get dull, just not as quickly as steel knives. And when you do need to sharpen them it's impractical to do at home.

2) they only exist in relatively small (short) blade sizes. That's fine if you need to mince some garlic but they're far too short for many kitchen tasks.

I got this at the dollar store and use it once a week on my knife. I run it under water for a second then swipe the knife about 10 times on each side. I can cut through veggies and stuff just by pressing down so I guess thats good enough.

Not following well are you? I previous posts in this very thread I talked about using a file and steel at home. Knives do get dull during shift and need to be sharpened. I don't know how much veg, chicken, pork and beef you are going through in your shift or if you are just a home cook talking from zero experience. Also, I use the white handled 19 inch Restaurant Depot chef knife.

Agreed. But I think you'll find that everyone has something they focus that much on. Maybe it's playing the guitar. Maybe it's vidya games. Maybe it's hand-washing their car. Maybe it's facebook. But pretty much everyone has something they focus on more than necessary.


That being said, you don't have to spend ages or have a massive collection of stones to sharpen knives. It only takes a few minutes to do a really good job.
