if you just chop them up and dry fry them they'll be delicious. i usually brine them, but that's not effort. the whole thing of salting and draining them is kind of a relic cause most aubergines you get nowadays are nowhere near as bitter as they used to be. if you're worried about them soaking up loads of oil, they don't even need any to be good.
Anyone ever try this?
I've been thinking of going out and collecting some this year after reading about it.
