So I've been an idiot and accidentally bought 1kg of ginger (online shopping) - but I've only ever used it for stir fries, what else can I make that uses a shit ton of ginger?

Ginger is awesome in all sorts of stuff.
I like to use it in a simple slaw with red cabbage, carrot, and ginger, with cane vinegar, salt, and pepper.
Also good as a seasoning in all sorts of curries.

I use it for vaguely asian-style braises. Get a shoulder cut from a pig or a cow or a goat or whatever the fuck, sear it in the dutch oven, pour in some rice wine or beer, soy sauce, smashed garlic cloves, sesame oil, and slices of ginger and let it go in the oven until it shreds nicely. You can do rice bowls with it or you can stuff it into eggrolls. Or just do whatever you'd normally do with a bunch of braised meat.
You can also make falernum. Macerate matchsticks of ginger in some wray and nephew overproof along with some toasted cloves and slivered almonds, lime zest, a vanilla bean and a just a few allspice berries. Strain the solids out and combine the infused booze with some rich syrup. Shit's GOAT.
Kombucha
Dry it. If your house has a very low relative humidity and you don't have flies or pests, you can just slice it very thinly and leave it uncovered on some parchment paper on the counter and it will dry out in a couple of days. Otherwise you could dry it in a food dehydrator or in an oven set to around 50-70 C.

>slice lemon
>boil ginger and lemon in water together with sugar for 45min

Try using some ginger in your slow juicer. It goes very well with most fruits
use it when seasoning , I experiment with flavors including tomato and ginger when cooking steak, and I enjoy ginger tea
