At least my father always made Moussaka without frying them. Tasted like shit though. Nothing worse taste than raw eggplant.
Put oil in a pan, fuckloads of salt and fry them almost dry. Only way I can eat them.

My favorite eggplant dish is a staple of sichuan chinese food. Eggplant and sometimes green bean and tofu in garlic sauce. Sorry, I've never prepared it so i don't have a recipe but I'm sure you can find one

Vegetarians will use them in place of Chicken for Chicken Parmesan. I'm not sure how, but I'd look for a spice blend to make them a bit more savory. Cumin?
Eggplant Casserole - 1 medium eggplant (about 1lb) or 1 zucchini squash diced. 3/4 cup shredded carrots. 1/2 cup diced onions. 6 tbsp butter or oleo. 1/2 cup dairy sour cream. 1 can cream of chicken or cream of celery soup. 2 1/4 herbed stuffing cubes. Steam eggplant or zucchini over water until tender; drain. Saute carrots and onions in 4 tbsp oleo until tender. remove from heat mix preceding 3/4 cup of cubes. put in 1 1/2 quart of buttered casserole. melt remaining oleo and saute 3/4 cup cubes. Sprinkle on top. Bake at 350 for abot 30 minutes.

Today I've made a sorta caponata. Fried up chopped bacon with garlic and onion. Then I added diced potatoes and carrots with some chicken stock and tomato paste, then some diced eggplant and tomatoes. I grilled some polenta slices (basically solid state grits?) and used them in lieu of bread. Came out breddy damn good.

Peel 2 eggplants and cut them into cubes or slices. Slice up an onion, some zuccini and some squash. Throw in some olive oil, calamata olives (or black olives) and 2 cups of feta. Mix it up with a 32oz can of good chopped tomatoes. No del monte garbage, tuttorosso is my favorite, or pomi. It needs basil and majoram, but any italian or greek seasoning works. Black pepper and salt is good after its plated.
Bake at 375 for 1 hour. Serve over rice with some meat like sausage or sliced grilled chicken.
Such a healthy and affordable recipe.
