What is this hard brown stuff on the bottom of this green pepper? I'm making stuffed peppers and I don't know if it will effect the taste or texture
It just didn't get enough water. It's A-OK
That is called corking. It happens to a lot of peppers, notibly the JalapeƱo. It does not effect flavor or texture.

The ovens not even required. I stopped making stuffed peppers because sauteing all the ingredients together made it taste better and have more consistency in the texture. Try it with fritos. Shit is delicious.
