In Michigan we have Hass or Shepard (dark seeds and even darker rinds.) Had no idea this was even a bitter fruit as the ones I've cooked with and eaten (Midwest exclusively seems to have it on the menu) are creamy with a fatty texture generally used to compliment citric tastes. They're unique and exquisite albeit not the type of thing you'd want every day.
They would go in the same category as the mushroom, in my opinion, which is to say objectively delicious.

Tre ripened would be best, but avocados do ripen with age. It's not always possible to get them perfectly ripe at the store but if you let them sit on your counter they will ripen.

If you ever want to ripen them quickly, you can stick them in a paper bag with an apple and leave them out on the counter overnight.
Don't leave them too long, or they'll overripen.
It's not "bitter", it's pure fat. You cut it with lime/lemon juice. That being said, I really don't know how the restaurants get it so right because I can never get rid of the overly fatty flavor.

It must be soft but the real trick lays on the seed. You see when an avocado is truly ripe the seed gets loose, therefore when you shake it (gently) you should feel/hear the seed moving.
Be careful, avocados get ripe super fast (you could hasten the process by covering it with newspaper).
Overripen avocados aren't good for your stomach, but they work wonders on girls hair.
All of this is done with south american avocados though.
