I have a spice mixture I made of sumac, mahleb, achoor, and just a tiny bit of green cardamom in sweet dishes. It's got this really unusual tang to it, and it works really well to bring down the sweetness of something if it's a bit cloying, and it almost gives things a tannic bite if I use enough. The cardamom is mostly there to offset the other spices just enough so that it's not too strong of one flavor note.

I never use beef for bolognaise sauce, i prefer lean pork.

If i don't want to make a sauce from scratch i use milk, not water, to get the last bits of pasta sauce in the jar.
