Make a smoothie out of it.
Cut it up, freeze it, put it in a blender or food processer. Maybe add in some almond milk, chia seeds, and/or other fruits and juices if you want to bother buying them. just look up "watermelon smoothie" on the google and you'll find tons of recipes.
