Greasy noodle thread

Why are they so good?
Why do they not serve it in traditional chinese grease style boxes anymore like in rushhour the movie starring Jackie Chan and Chris Tucker?

Why are there no greasy noodle specific carts around major cities like hot dog carts?

Why?

The greasy noodle carts by where I work serve it in those containers. It's a moderately large city.
